Look as someone who has roughly a million hobbies (yes I have ADHD, the testing process basically went you? oh for sure) the thing you have to remember is that a lot of the basic skills involved in hobbies are things you just naturally get better at as you live longer, especially if you're a person who does stuff. Almost any hobby that involves making something is going to give you a skill boost in other tasks that involve making something.
Your hands get steadier, your fine motor control continues to improve, and your ability to stick with a task even after failing a few times will be improved by doing any hobby. So yeah--my pottery class has had a noticeable effect on my woodcarving ability. Painting a lot has helped my eye for color and balance in interior decor. Even when you don't have an increase in the physical skills involved, making things is going to build your confidence. You don't have to master every skill. I can do a lot of things pretty decently, and that means that when I take on a new challenge, I have faith that I'm probably going to be able to do that thing pretty decently too, even if it's totally new.
If you tried something a while ago and it went badly, try making it again. Odds are good that the time that's passed has given you more patience, more steadiness, more confidence. You might not succeed right away but you're probably going to do better than you expect. And if you don't have something you want to retry, then try something new. I don't think there's much more fulfilling in life than learning and making something, and having the confidence to keep doing that.
Anyways today I'm going to try cheesemaking. I've never done it before but the worst that can happen is I ruin some milk, so here we go.
